Michelin-starred Chef David Gallienne: 'Vietnamese agricultural products are remarkably rich and unique'

On April 25 in Hanoi, the French Embassy in Vietnam hosted a business networking event during the visit of Ms. Delphine Walh, Director General of the Chamber of Commerce and Industry of the Normandy region, France. The event underscored the strong ties between the two regions, both rich in cultural heritage and dynamic economic growth.

Ms. Marie Keller, First Counselor of the French Embassy in Vietnam, highlighted that Normandy is not only a strong industrial hub but also a region renowned for its high-quality local agricultural products, branded with a modern touch. Meanwhile, Ms. Delphine Walh noted that the Normandy Chamber of Commerce manages a network of over 200,000 enterprises, playing a pivotal role in supporting connectivity and enhancing international competitiveness for its partners.

A highlight of the meeting was the presence of Michelin-starred chef David Gallienne. Sharing his culinary experiences in Vietnam, he remarked: 'Vietnamese agricultural products and cuisine are incredibly rich and carry a distinct regional identity.' He recalled fond memories of visiting traditional markets in Ha Long Bay and directly utilizing local ingredients in his cooking.

Aiming to elevate traditional dishes from the Normandy region, Chef Gallienne expressed his intention to source indigenous Vietnamese herb seeds, such as cilantro and basil, to cultivate in France. The initiative to grow these specific herbs in his restaurant reflects his high regard for Vietnam's agricultural potential and opens prospects for collaboration in ingredient exchange between the two culinary cultures.
